Lentils...

So you know that you are in a happy comfortable relationship when after you make dinner (more about the menu later) and you say to The Fiance before you toast the wine (Swanson's Merlot.  Yum) "Ohhhh...lentils.  Do you think I should grab the Beano before we eat?"

So in an attempt to make getting healthier (aka losing weight) as complicated as possible I am doing a combination of Weight Watchers and the Shape Magazine (or is it Self Magazine? they are kinda the same) challenge with Jillian Michaels (I heart Jillian Michaels).  So it is four pages of super yummy (super easy) recipes that you pick and choose from.  So last night I made lentil stew.  Here is what the actual recipe is but we added curry, salt and pepper (and that is a picture I took of what I made).

Lentil Stew
Sauté 2 cups cubed eggplant and 1 cup sliced mushrooms in 2 tsp olive oil until tender, 10 minutes. Add 2 cups spinach and 1 cup cooked lentils; cook until spinach wilts, 4 minutes. Top with 2 tsp chopped fresh cilantro and lime juice. 368 calories, 11 g fat (1 g saturated), 52 g carbs, 23 g fiber, 23 g protein

You should try it.  Tonight I am making Indian Meatballs.
